Я понял:
Вместо прямого вывода на STDOUT я фактически захватываю вывод внутри переменной, я удаляю экран с помощью echo chr(27) . '[2J'
echo chr(27) . '[2J'
а затем вывести на STDOUT содержимое переменной, а затем добавить мой индикатор выполнения.

Вызов функции в первый раз выводит индикатор выполнения, и каждый последующий вызов перезаписывает последнюю строку с новой индикацией выполнения.
